I looove chicken salad. Its a newer love but since embracing the ease of chicken salads, I can’t get enough.
I always like to have leftover chicken in the fridge. Which makes whipping up a chicken salad a breeze! It can be a quick lunch or dinner and it’s great for lunch boxes!
This chicken salad is my family’s favorite! The kids love that it has grapes and apples and that they get to eat crackers with dinner. The adults love that too and the overall flavor. I also love that it’s another recipe with turmeric. (Read about the benefits of turmeric at the bottom of this post.)
This recipe is also a treat because local grapes are in season for only a couple weeks at the end of summer. As soon as my box is delivered I hide my grapes until I get this salad made. Those grapes are so good - they would be gone and there would be no salad if I didn’t!
Hopefully you can save some grapes to try this salad too. It’s worth it!
3 c. diced cooked chicken
3/4 c. diced celery
3/4 c. halved grapes
1 medium apple, diced
3/4 c. avocado mayo
1 1/2 tsp. curry powder
1/4 tsp. turmeric powder
1/4 tsp. sea salt
1/8 tsp. ground black pepper
- In a large bowl combine chicken, celery, grapes and apple.
- In a separate bowl, combine mayo, curry powder, turmeric, salt, and pepper.
- Pour dressing over salad, toss to coat. Serve in lettuce cups, with crackers, or in between 2 slices of toast.
Note: When serving in lettuce cups, I like to garnish with pepitas or sliced almonds for extra crunch.
